Coconut ice cream




Coconut ice cream

400ml coconut milk (I prefer ‘Chaokoh’ brand)
300ml whipping cream
150g granulated sugar
2 medium eggs
2tbsp desiccated sweeten coconut
1 freezer proof container

1)    Mix the coconut milk, whipping cream and sugar in a saucepan. Stir constantly and heat until the mixture is boiled. Remove from the heat.
2)    Break the eggs into a mixing bowl and whisk. Pour the coconut mixture onto the eggs. Leave the mixture cool completely.
3)     When it is cool down, pour the mixture in a freezer proof container and freeze until it is firm.
4)     Alternatively you can use an electric ice cream maker.
5)     Sprinkle some desiccated coconut to serve.
