Steamed fish with fresh chillies, ginger, lemon greass and garlic



Steamed fish with fresh chillies, ginger, lemon greass and garlic

1 whole trout (or other kinds of fish you like)
3 Thai red chillies, finely chopped
3 garlic cloves, finely chopped
2in piece of fresh ginger, finely chopped
2 stalks lemon grass, finely chopped
1tbsp chopped fresh coriander
1 lime
2tbsp fish sauce, 1tbsp soy sauce and hint of granulated sugar
2 fresh banana leaves

1)    Clean the fish and dry it with kitchen paper. Cut the head off.
2)    Place the banana leaf in a steamer and lay the fish on top. Spread all the ingredients over the fish. Season the fish with some fish sauce, soy sauce and hint of sugar.
3)    Squeeze the lime juice on the fish.
4)    Steam it in a steamer for 30 minutes (or until the fish is cooked).
