Thai style beef burger with mango relish



Thai style beef burger with mango relish

250g lean beef steak mince
2 garlic cloves, finely chopped
1 stalk lemon grass, finely chopped
½ onion (preferably red onion), finely chopped
½ tbsp red curry paste (I prefer ‘Mae Ploy’ brand) (if you want it spicier you can increase it to 1 tbsp or less it you prefer it less spicy)
1tbsp fish sauce, 1tbsp soy sauce, hint of granulated sugar

1)    Combine all the ingredients in a mixing bowl. Mix them well.
2)    Season it with ½ tbsp red curry paste, 1tbsp fish sauce, 1tbsp soy sauce and hint of sugar. Mix them well with the meat. Use your hand if necessary.
3)    Roll and shape the mixed mince beef or lamb into patties. Leave them overnight in a fridge.
4)    You can either grill or pan-fry the beef steak.

Mango relish
½ mango, chopped into small cubes
½ cup water
1tbsp granulated sugar
¼ of the whole fresh cucumber, sliced
2 fresh garlic cloves, finely chopped
2 Thai red chillies, finely chopped
Coriander for garnish

1)    Put ½ cup water and 1tbsp granulated sugar in a saucepan or a small pot. Heat it on a hob.
2)    Stir until the sugar is dissolved, then remove it from the heat and leave it to cool down.
3)    Combine the rest of the ingredients together in a small bowl and pour over the mixture. Make sure that it is cool as cucumber and mango should be fresh when served. Garnish it with some coriander (optional).

Serve the beef burger with some steamed vegetables or salad and the mango relish.
