Thai style spaghetti



Thai style spaghetti

250g fresh spaghetti
2-3 garlic cloves, finely chopped
2-3 Thai red chillies, finely chopped
2 chicken fillets, cut into small pieces (alternatively you can use mince pork or prawns)
1tbsp fish sauce, 1 tbsp soy sauce, 1 tbsp oyster sauce, hint of granulated sugar
10 basil leaves
1 red onion, chopped
2tbsp sunflower or vegetable oil for frying

1)    Heat the oil in a wok. Add the garlic and chillies when it is hot and stir until the garlic is golden.
2)    Add the chopped chicken (or mince pork or prawns) and stir fry until it is cooked.
3)    Add the chopped red onions and stir fry for a few minutes.
4)    Add the spaghetti and stir fry until it is cooked.
5)    Season it with 1tbsp fish sauce, 1tbsp oyster sauce, 1tbsp soy sauce and hint of sugar. Stir fry for a few minutes.
6)    Add the basil leaves and stir fry for a minute. Garnish it with some deep fried basil leaves (optional) and chopped fresh chillies.
