Thai style steamed eggs



Thai style steamed eggs

100g mince pork (bacon can also be used)
2-3 Thai shallots, chopped
3-4 eggs
1 spring onion, chopped
1 garlic clove, finely chopped
1/2 tbsp fish sauce, 1/2 tbsp soy sauce, hint of granulated sugar
2tbsp sunflower or vegetable oil
¼ tsp ground black pepper

1)    Break the eggs into a mixing bowl. Beat them well with a fork.
2)    Add the spring onions and mince pork to the bowl.
3)    Add the 1/2 tbsp fish sauce, 1/2 tbsp soy sauce and hint of sugar. Mix them well. Try not to make a lot of bubble.
4)    Sprinkle some ground black pepper.
5)    Pour the mixture into small heatproof bowls. Steam them for 15 minutes.
6)    Heat the oil in a frying pan. Add the chopped garlic and shallots and stir until they are golden.
7)    When serve, pour the garlic and shallots over the steamed eggs.
